意義：檸檬酸 (Citric Acid, CA) 是一種重要的有機(jī)酸，又名枸櫞酸，CA 是生物體內(nèi)常見(jiàn)的有機(jī)酸，是重要的食品風(fēng)味物質(zhì)。此外，CA 是三羧酸循環(huán)反應(yīng)系統(tǒng)中，由草酰乙酸加入乙酰輔酶a的乙?；纬傻漠a(chǎn)物。 原理：酸性條件下，檸檬酸還原 Cr6+生成 Cr3+，在 545nm 處有特征吸收峰；通過(guò)測(cè)定 545nm 吸光 值的增加，即可計(jì)算出樣品中檸檬酸含量。 |
